    3 hours on the smoke, crutched and back into the cooker. It flared up and is now at 280.

    Edit - got to 298 and I dialed the last damper at bottom to 10 percent. Is slowly dropping now.

    Smelled and looked SOO GOOD

    Normally for mine, i have two closed and one open like 1/4 for 225.

    Green coffee beans are super cheap. Like $8 a pound or less. You just order them online.

    I don’t roast my own beans, so no. My buddy just got a roaster though and I think he said there’s a place in Oakland that a lot of people get from. Not sure though. I just know getting green beans is super cheap compared to buying a fresh bag. For reference, a good 1lb bag of coffee will run you a bare minimum of $20.

    That does make better sense to roast your own.

    I import coffee from Panama 3 times a year at $35/lb plus shipping.

    Yowza.... these turned out great! I finished them out of the pan with a glazing of the juice and a dusting of black pepper. Damn good. Might have to update the website with a new recipe :laugh:.

    About to take the ribs out of the dry crutch. I can't take it anymore, if they pass the temp rest I'm having a sample. Think I am going to leave these dry to really get a taste of the Pitfaced rub.

    Sounds accurate. Like I said, I don’t roast my own but my friend is getting in to it. I’ll soon be getting lots of free coffee! He also works production at a brewery so I always get free beer too :D

    EDIT - GOOD LORD they literally melt in your mouth.
