    Smashed'n'mashed and stuff added to 'em to transform them into my version of frijoles.

    Fried up a couple smallish filets of flounder....that I feasted on as I was cooking and set up the fixings for my tribe.


    The only avocados I had aren't quite ripe enough to make guacamole....maybe with tomorrows leftovers.





    Gonna use these as "taco shells".

    First try at vegetable beef stew in the IP. Not bad, but I should have browned the beef. Too lazy, after trimming and cubing. A wizard with a sharp knife I am not. 20190127_181947[1].jpg Had no green beans, CGG has been corporal punished. :)

    How the veggies come out? First time I did it they turned to mush (was tasty though). Trying to figure out the best way for the speed but not disappearing veggies.

    LOL. And disagree I just sharpened 2 Chicago Cutlery boning knifes and the drop point paring knife today. Have ~1k in those fancy Japanese knifes but keep going back to those.

    Am doing IP pot roast. Chili. Beef stew. All the meat will be smoked and grilled with grillgrates. Waiting on the kid to get out of the kitchen ugh.

    Veggies were well done, taters were disappearing. Still tasty, I ate 3 small bowls, 2 more than I should have. Last one a splashed with Tabasco. :thumbsup:

    Next time I will brown the beef and PC, natural release, then add the veggies and PC again for a bit. What ya think, good idea or not?

    Hell yes. And going to try to put a little smoke on it too. Zero now. Wind is blowing like a bitch not sure of windchill and not going to look. But snow is blowing sideways. Again. Don't want to deal with ash from the charcoal though and with the grillgrates can come close. But that damn wind... OK you made me look -16° and snowing like a bitch.

    But meat got to be cooked. And hungry..

    Those are not trees to the right of the grill, that is snow falling. Or blowing sideways depends on how you look at it LOL.

    First 30 minutes in the IP with beef base, gravy mix, bottle of coke and some seasoning. Onions as a base on the bottom.

    After 30 min. HP natural release then potatoes, peas and corn. Oh and some of those roasted peppers cut up.

    Letting it cool now and will throw in the fridge to deal with in the morning along with the rest of the steak. My son put a hurting on it. Then again I ate all my supper tonight.

    All of it. Cherry wood smoke was a nice touch. Snow, cold and wind not so much.

    Normally on the morning after a Tex-Mex supper I'll do something like breakfast burritos and incorporate the leftovers.


    Had the luxury of having the day off work this Monday and wanted to wake up my bride with something decidedly different than Messican, which, she's grown tired of.




    A pot of strong coffee for me and some homemade biscuits for her. Teenage T-Rex came through and knocked off few himself.

    Grits is a staple in our house. We sometimes do the cheezy grits also, but usually just with a tomato & onion sauce and either brats or lamb chops, or both!.

    Yessir! Those look amazing. I love eating grits for breakfast as well. You can take the boy out of the South, but you can't take the South out of this boy!
