On a 17x7 +4mm, a 255/75/17 adds 15mm of positive scrub. More positive scrub=more bumpsteer; it extends the 'lever'.

I'm betting the 17s bumpsteer more and the 16s wander more?

ehh truck doesn't wander, alignment is good. Have aftermarket SPC UCAs. Just annoying dumpster on railroad tracks and road cracks

What's the effect on tire wear with increased +camber? Or maxed camber?

Scrub is the distance between the center of tire and where SAI intersects on the ground.
Changing tire diameter and/or offset changes it.

I'm assuming stock rims for the 265/75/16s.

    What are your alignment numbers?

So what is the max caster I could have a shop align me at? 3 degrees? What would be out of spec?
