    Well Plated!!!

    You got some nice looking nuts there..... I am just hearing about smoking nuts. Have to do some research. It couldn't be as easy as "nuts + smoker + smoke"?? I used to work for the government so I need to make it far more complex.

    Today I am going to try out the tube, see how it starts and runs... It came pre-filled with PitMasters Choice pellets.

    Nothing wrong with that...we make our own jams and I get hungry for a snack at around 10-11pm but I dont want to eat a meal so I make a PB&J and that tides me over to breakfast...:D

    I'm lucky Wisconsin is only an hour away from me. But seems like some have pretty strong ideas which cheese factory is the "best" so am usually careful what I say...

    Hook's Blue from Hook's Cheese in Mineral Point, Wi.

    Have a friend that lives down in Mineral Point and we shoot sporting clays together several times a year. I always place an order with him before the shoots.

    Eau Galle Cheese Factory is close to me so I stop there when I am over on the River. Or if I don't feel like driving that far Nelson Cheese Factory, they also sell Eau Galle.

    Just like a steak, but longer. I usually cut the bones off for the dog before I grill them.

    LOL I am retired Navy and the last girlfriend I had always accused me of making things more complex than they need to be. On the other hand I now design high availability systems with disaster recovery, so.. And when I do things they usually turn out right but do a lot of pondering and research first.

    Almonds and cashews I just smoke without doing anything to them except salting first. However have read enough people doing cashews and walnuts after coating them that I want to try it.

    At some point am going to do Chris's (Owner) method from the Weber Virtual Bullet website and have had it in my google docs for awhile. I should make a run to Fleet Farm tomorrow and pick up some bulk walnuts and almonds.

    1-1/2 Tablespoons butter
    1 Tablespoon brown sugar
    1 teaspoon crushed dried rosemary
    1/4 teaspoon garlic powder
    2 cups of walnut half's (about 1/2 pound)
    1/4 teaspoon coarse salt

    Mix everything but the nuts on the stove, then add the nuts and mix her up. Then smoke at 225-250 for 30 minutes.

    I thought I was the only one who used the word "ponder".

    I frequent the Weber Virtual Bullet website as well, I have a 18 WSM I got from my Dad (Navy in WW2). They are all around great cookers.

    Thx for the recipe. Looks easy and tasty.

    I plan, I blow holes in my plan, I fix, I go over it again, then again and then when I'm sure I have it all right I look again. At the end I implement and 9 out of 10 times I don't have to redo or fix anything. :thumbsup:

    I'm going to be going to Kroger's after a bit, I'll have to look for those varieties.

    I live in the heart of Swiss cheese country and I, too, have to be careful with my recommendations.

    mats, flaps, and stickers. Extang solid fold 2.0. Mobtown sliders and full skids. AVS vents
    I love them. I dry brine each side for an hour with kosher salt, in the fridge. Get smoker going at 225 with oak and/or hickory chunks. Add whatever other seasonings you want, and put it in the smoker until it hits 110-120. Take it off, rest a few minutes, and get some smoking hot coals, pan, or grill going. Sear until whatever finish temp you prefer. Rest loosly covered for ten minutes. Then slice and eat that bad boy.

    Following the above was the best steak I've ever eaten. I try to get 3-3.5 pounders, they seem to work out the best.

    Sams club has them for around $9 a pound. Not bad for 3 pounds of meat.

    Tri tip for dinner for me tonight. Had frozen a couple from Costco a couple weeks back.

    Getting a nice butt as well at Costco today for this weekend. Probably will start the smoker before I go to bed so it'll be ready by the time people start coming over for the game. Mac N Cheese too. mmmm. Can't wait till Sunday!
