    It does appear I am one of the few that does a signature..... Have I annoyed everyone enough that I can stop with the "RiskDude"? Old habits are hard to break...

    Doing some ribeye steak reverse sear tomorrow. Best way/time to season them: night before, a few hours before or a few minutes before?

    D: none of the above. A good cut of beef needs no seasoning, imo. A little s&p at the table, or Montreal. You have several steaks, try one naked and see what you think. The others I would season for no more than an hour.

    See my post above about the cowboy steaks.

    I’d say brine with kosher salt. Salt one side, put in fridge for an hour. Turn over, salt other side, fridge for an hour. Take out, season with whatever else you want, then smoke and sear.

    That process keeps it to a beefy flavor, which i like. I’m not a big marinade guy for steaks.

    Why mask the flavor of an expensive piece of meat?

    My wife likes the steak sauce with hers. Now, it’s not a small dab of sauce, every bite is completely covered. I told her the other night, that if she did it with the porterhouses/t-bones i made, i would not buy steaks for her anymore, or she’d get cubed steaks.

    I'm lucky. My girl enjoys a nice medium rare steak with little to no seasoning and never any steak sauce. I have been using Pit Face on my steaks, but I usually just give it a very light dusting. I'll try the salt, fridge, salt, fridge, pepper method tonight and see how they turn out

    I’m charging it now. My first impression, I can’t tell if I’m plugging that charging port correctly. The plug that goes in to the unit looks almost exactly the same, top or bottom. Then I noticed one side has a marking. It’s not like your typical micro usb where one side is wider than the other. I’m assuming the marking facing up ?? Both ways fits and charges

    Don’t thank me, I just passed along the details!!

    I got mine today as well. Got it charged, tested the probes, they were all good with the boil and ice water method.

    I’m going to do a brisket for the superbowl, and will be using it. I got it for the number of probes, and high/low oven temp alarms.

    I just plugged them in without looking. Mine was pretty full from the box.

    While on charge, neither will turn off.
