    I wanted to do it tomorrow. But already agreed to go to a Super Bowl party. So freezer for now unfortunately

    Costco butcher told me it’s a special occasion type product. He said super bowl and July 4 but not guaranteed

    My local costco and sams sucks for packers. Flats only. Wamart has some occasionally, but select only.

    Thanks, all. Had a good time with the family last night. We cooked ribeyes on a Weber that must be pushing 20 years old. Drank some Seagram's 7 and 7s, too. Lots of great stories were shared.

    I appreciate all of the condolences. This is such a great community.

    It kind of hits me every once in a while right now. No shame in those tears. Grandpa shared some stories with me, but not a lot. I talked to him every Veteran's Day and every Memorial Day without fail. He'd recall some of his time in the military, but he did keep a lot of things close to the chest. Still, he saw the value in making sure future generations understood what they were fighting for and how the rest of the country pitched in on the war effort.


    Thanks a bunch, @Cold Iron . I think the two of you would have gotten along JUST fine. Hell, you and I are pretty damn similar and I'm just a chip off that old block.


    Thanks a lot. I'm participating in this learning process like everyone else. It's a great hobby and those that are dedicated to the craft tend to be good people that you want to be around. That's the feeling I get with this group - even if we're only around each other virtually. :D

    I appreciate the condolences and I couldn't ask for a bigger compliment :). Truth is, this thread has been a source of inspiration for me, too. It is more active and forthcoming (both successes and failures) than most BBQ dedicated forums that I browse. There are great ideas in the successes and lots of group learning through diagnosing the failures. Great group of folks we have here - I'm glad to be a part of it.

    Switching gears, this brisket went on earlier this morning. It's a Choice brisket from Kroger during their $1.77/lb sale (you non-Texans read that right ;)).

    No issue with cooking a Choice after cooking so much Prime, but this one was butchered horribly. There is a gash across the top of the flat and they did something weird when butchering the area near the fat that separates the point and flat. There was a huge opening straight through the thing.

    Oh well. A little rub and smoke and no one will care.

    The company tonight is a couple from California that is visiting my folks. They are huge fans of our rub, so we're giving them the Pitfaced experience this evening. "Unicorn" rub on the brisket, with some smoked sides featuring Meat Massage on their way soon. I figured since they're visiting Texas, I ought to hit them with a little oak wood, too. Not normally my go-to wood, but it does make a nice, bold smoke statement.

    Yessir .Had about 20. 10 were such a wast as they had soooo much fat. Over 23 pounders.

    These 4 were worth taking. All about 19 lbs... Probably be around 16 trimmed.
