    Made tritip last night, for the first time ever.

    I cheated... used the oven. It was getting late, knee is still jacked so I am hobbling about on a cane, and couldn't be bothered to setup the smoker.

    Seared for 3 minutes a side in a smoking hot cast iron skillet on the stovetop, then into the oven at 425 for 18 minutes (monitoring the temp with the thermopro). Pulled at 128, it rose another 20 degrees in the rest! Should have pulled about 118, like I did my rib roast.

    It's on the medium side of medium rare, but I was aiming for the rare side of medium rare. Still not terrible. This is why steak sauce is a thing.

    Tried the Alton brown method with potatoes, too. 350 degree oven, wash and dry them, poke them, then oil and salt. NO foil. Into the oven nude (I used a cookie sheet just to keep the mess down) for an hour and 5 minutes. A bit drier than I would have liked inside, but I went a little psycho with the poking (phrasing!). Very crispy skin, and a better texture inside than my previous experiments. I think another 10 minutes in the oven would have them perfect. I will definitely try this again.

    I think they usually go about 55-60 mins. darn near perfect for us. 425 or 450. can't remember. Oil and salt and plenty o pokin :rofl:

    I did mine at 350. This may be the deciding factor. I will try soon, I have three more already cooked and the remains of the 5 pound bag raw.

    Recommended viewing for a mindless comedy. If you liked The Office in its prime, Parks & Recreation is cut from the same cloth, though about 85% as good.
