    once these are done, the PBBEs go on, then 3 hours later, the brisket :bananadance:

    Gonna swap the pellets after the PBBEs to post oak. probably about an hour left in the PBBEs so the chute will clear out the pecan so I can do post oak for the brisket. :thumbsup::cheers:

    That sounds good, glad the pit is back working again. How did you do the ribs. Fall off the bone or naw off the bone like a raccoon comp style?

    straight out of the foil the were about to fall apart. usually about 45 mins back on heat gets up tighter a bit. really close to fall off bone but just enough to hold it on is goal

    Held together just enough but peels away from bone super easy. really close to just right for us.

    Jeffs Rub... I don't think it lends itself really well the Trigg Method. Really good seasoning but seemed to compete with the Trigg flavors a bit. Still really good, but I prefer the Salk Lick Rub for Trigg ribs. Really should've done 1 rack straight up. But not a wasted effort at all. Really enjoyed em.

    Inkbird:

    Temps were rock solid all around the pit all cook. Really confident in it now. Impressed even. will test em on the brisket later tonight. Gonna do 1 in point, one in thick flat and one in smaller flat I think.

    PBBEs. Y'all know the drill. Tons of PF Spicy. Sorry @bvbull200 , the rub was in a ziplock bag so I coudn't get a photo op :anonymous: I will find a shaker for later :D

    Made sure to get them all fat side down for heat protection. Left the rack on the lower shelf for now. Will get the brisket out there in a couple hours or so and move them up.

    Long night so far. should've started sooner. oh well. more beer :thumbsup::cheers:

    Bout 23:45 I can foil pan the PBBE's for their finish in the oven to braise with the fixings. Toss brisket on and nap for tomorrows Cars and Coffee meetup. Then home again to pull the brisket, hopefully around noon so I can rest it 3 hours ish. good way to wrap up the weekend I think :amen:
