    Ended up adding Trigg fixins to these as well. Usually I just do Butter, Brown Sugar, and Honey, but I added Tiger sauce. Cause why not?! Now they are in the oven to restart at 4 for 2 hours at 265 to braise.

    apparently my garage fridge is too cold on top back. pulled out brisket to throw it on and it was 1/4 frozen :annoyed:

    In house fridge now. Will start in morning if thawed or Monday morning :bananadead:

    This brisket is just not meant to be. But I'll conquer it!!

    Trying my hand at pulled pork today. Got a 5 pound Boston Butt, going to use Pitface Spicy on it and pull at 200 degrees (as my son likes it melt-in-your-mouth) and give it an hour to rest before pulling.

    Will serve with sweet Hawaiian rolls a la sliders, maybe some Cole slaw, and of course Sweet Baby Ray's to top it. I'm also open to suggestions for other serving options. Most of it will likely be vac packed tonight, as I have the new toy to test out (vac seal of my banana bread wasn't the smartest move last week!) And there is no way I'll eat 5 pounds of pulled pork by myself this week.

    Just got the pit started at 930 or so, it's at 199 and climbing now.... top vent is 100 percent open, 2 of 3 bottom vents are sealed, and the 3rd is 50 percent. I'm using the last of my Stubb's charcoal as I'm moving back to briquets.

    Damn fine idea. Flour tortillas though, dont like the crunch.

    Now I need to work on breakfast. I have this huge ribeye I bought yesterday, maybe cut in half, lots of Montreal seasoning and a trip through the broiler as I fry some eggs over easy....

    Temp is now at 209 and slowly climbing. I think most of the energy is now going into heating the couple gallons of water as a heat sink.

    Hmm.. 208. Time to adjust...
