    excellent. Thought so. Last wagyu I did was real tender but real fine line of juicy/dry. Think I pulled right at probe tender IIRC. I hope to rest this one at least 2 hours. 3 preferable, but it's already almost 18:00. Not rushing though. I need a baseline :smokertransformer:

    I was sweating the outcome so had the wife text me every 30 minutes with a pic of the meter. Looked like kr was going to hit temp so I hurried home. It got right up to 191... I planned to pull at 195 or so.... and stalled .

    Temp has dropped 2 degrees now. Smoker is at 220.

    Temp has dropped 10 degrees now. I added fuel to the fire to get it back to 250 as well.

    Also, just found I'm out of beer...after drinking my last one. Argh.

    Told you I was ready for a nap..

    Woke up 15 minutes ago, noting the temp had dropped again. Screw it, I'll pull it.

    Had to do so in multiple pieces. I tried to with tongs and found the shoulder blade bone in my tong. Pulled, shredded, and in the fridge now. I have more pork than I know what to do with, now.

    Not sure what to do here. Gonna be 23:00 before I can slice. Probably let it roll in the cooler overnight like this, vac seal in morning and toss in fridge til reheat tomorrow night?


    Thoughts? don't want to slice later tonight just to do it.... although I am curious as hell!
