    I'm no stranger to failed cooks, especially on new to me recipes. Kinda like wives, had to try 2 before I got a good one. :)

    I do mine about an hour or 2 before smoking. Not sure if it matters or not but that is how I have always done them.

    Just a thought, when you braised them did you cover them with aluminum foil?

    This is after I drained most of the juice out, the parts that stick above the liquid tend to get a bit more "crisp" even when covered. I actually like that part better. But yeah don't want to carbonize them either. I usually go 225° never more than 250° with pork belly burnt ends.

    They can crisp up quickly during that last uncovered bit. If there was a little extra heat or they ran for a few extra minutes, that could have been it. Skip the last 15 minutes next time or take a peek after about 5 minutes. Frankly, though, they don't look bad to me. Might have thrown them back in the juice for serving, but I like the crispier bits. Bet the fat was still plenty moist.

    Yeah, they cooked a little long and the sugar started to burn. Warmed some up for lunch with some spicy Sweet Baby Rays. Burn taste was completely gone! Still crispy, still moist.
    Maybe I need to F'up more often lol.

    Broke it. So half went on the kettle and the other half is on the gasser.

    It works great as a kind of griddle. Also a hokie heat deflector thing.

    I also run two or three bricks in the kettle as a kind of heat sink.

    Held 250f all day today without having to mess with it at all.

    I have a WSM but I’ve been having fun trying to get this kettle dialed in that I haven’t used it in months.

    I think I got the idea from this thread.

    Makes a big difference, plus gives a space to make a charcoal “snake” around.
