    Sorry if this is too late.

    You basically want to cook the pork chops the same way as the chicken breast. However, toss everything you know about how done the pork chops have to be, right out the fvcking window. You only need to cook the chops till 150°F. Carryover cooking will take it the rest of the way and the chops will stay juicy. And, no, you won't get trichinosis from eating pork this way.

    Same seasoning for chicken translates well to pork. You can bake them, put them in a 9x13 pan and pour white wine or pilsner in the pan till it comes halfway up the pork chops. Bake at 350ºF for about 30 minutes and then check the temperature of the chops.

    Change of plans. My meat guy talked me out of the shoulder. He had a nice 14 pound brisket on special, a rather small cut for his store. (I've rarely seen one under 20 there.)

    It's asking for a few more hours of watching the fire than I originally planned, but next week's lunches are gonna be the bombdiggity.
