    I don't, actually. Don't really do burritos. I made an awesome vegan enchilada a few weeks back though. That recipe is somewhere in the kitchen.

    I find that I like vegan food that doesn't try replace something else. As in its good just being the vegan variety. Like eggplant masala

    Yesterday at work our cafe had vegan 'hot dogs' as an option. I looked at it and burst out laughing. They served a fucking carrot in a hot dog bun and called it a vegan hot dog.

    The one exception to the "replace something else" I've found is the Impossible Burgers. Burgers used to be my go to thing and legit the one thing I missed when I changed my diet. Impossible burgers are delicious and actually look like burgers.

    8.5 Fisher XV2, some switches, some lights.
    1 cup rice (two cups cooked)
    1 can each Black beans & Red Kidney beans (or 1 cup each of dry, soaked overnight)
    1/2 - 1/3 cup sweet corn (I use frozen, because I freeze it myself, but canned would work too)
    Cheese
    Avocado/guacamole
    Veggies of your choice (I usually keep it fairly simple and just use some shredded lettuce and some salsa)
    Sour cream/Greek yogurt if you want it
    Hot sauce, if you want it

    • Rinse the beans (drain them first, if using canned) and cook the beans and corn together in a 2 quart pan. Drain and put back in the pan, then add chili powder, dried (or finely chopped fresh) cilantro, and ground jalapeno pepper to taste. Mix.
    • Fill your burrito with deliciousness and eat. Anticipate annoying wife/gf with gas later.
    You'll need the big burrito-sized tortillas to eat these properly, unless you want to make a hundred of the little ones, I guess. The GF and I make a variation on this recipe about once a week (we usually add leftover chicken, turkey, pork, etc), and typically we have enough left over for both of us to have lunch the next day too.

    Absolutely . I lover mushrooms. And had I known that's what it was, I probably wouldn't have got it that night. But I would have tried it another time.

    Bet some bloke must have been real chapped when he ordered the cheese burger there....

    Sorry , what I meant is that I have scotch tape on the door and that I needed to get it off prior to painting So I used denatured alcohol to get it off.

    My wife made flour Free banana pancakes really thin and not that feeling but quite good. I think it was a weight watchers recipe.

    I actually really like Veggie Burgers. I mean, not as much as a real burger, but they aren't that bad. But if you give me soy based cheese I will not be pleased!

    Hey I backed into a snowmobile and messed up my bumper, then a few weeks later backed into a steel plow and poked a hole in my tailgate. A little paint isn't a problem! And it will be hard to beat me for stupid!
