    Easy and tasty meal!

    You can cook it down longer and have some awesome samiches too!

    I seasoned with SPG. Added half can of beef broth, and a whole jar of pepperoncinis. Juice and all.

    Smoked with post oak.

    As always... with the pellet rig, I go aggressive on the trim. Nekkid on the point and real thin on the flat. there will still be fat on the flat when cooked. Chef's snack / grain identifier cut as well...

    Side note... This sucker had a looot of fat. I know I'm aggressive on the trim, but damn this thing was the fattiest I've done in my experience. Almost to the point I want to write Huntspoint and complain. I didn't take weights but I still can. This was supposed to be a 12-14 lb packer. I'll have to grab a weight pre-cook and see.

    Either way, looking forward to seeing if I can replicate this:

    Last time I had Vienna sausages was probably 30 years ago. We were floating the river and it started raining and got cold. My lunch was a can of Vienna sausages, but it was cold enough the juice in the can turned to jelly. It was not fun pulling one out and wiping the jelly off with my finger. It might be time to try some smoked though!

    Grubbed them right off the q. Saved two for the kitchen. One for my daughter and one for the dog. Wife thinks I'm crazy for liking but I can't pass up the pack of 18 at Costco :anonymous:
    They're a guilty pleasure. Coagulated meat juice is weird.
