at 225-250 it should last a full rib cook. depends on winds and yada yada, but I've gone 6+ hours on a setup like that. I do 4-5 briquettes though vice the three pictured. easy to add to the snake if it is running short too. slow consistent burn

will get as hot as you open the vents. easy to dial in low temps like this. For high heat cooks, the baskets work better

do you control your temp with the bottom or the top? i usually just use the weber for grilling so I go full open top and bottom.

Try to control with bottom only and keep the top at least 50% open or more if possibly. keeping the top closed over will result in more creosote build up on food (potentially). usually the bottom vent is only barely cracked.

I run the top open, bottom open to get temps coming up. When I gat around 200* i close the inlet back to barley open and start dialing in. once you get it, put a sharpie mark on the vent handle for ease starting point next time.

no problem. They are really good smokers once you learn them, which is usually your first cook

Then you can start looking for a 26" kettle :D much more capacity. @bvbull200 and @itzyoboipaul can attest as well

Yea I have the WSM and I use to use a chargriller smoker ( that thing was amazing) but after 4 years fell apart. Just never really smoked in the webber kettle.
Since im doing ribs and brisket this weekend I figured it be great to have both going since mixing meats/times in the WSM is super inconvenient and messy.

now you have to tell me your beans recipe. ..

Even my worst BBQ still came out pretty decent. If no one throws up then it was a success.

yea no im joking ill do fine, i just know how it goes with a first time smoker, doesnt always come out good the firstime until you figure out how it cooks.

I need this one to come out a little better than a first time though, and ribs are pretty easy most of the time.
