    I was really hoping pouring the grease over was gonna get the puff experience, and it did a little but it still needs work.

    Results were meh.

    The oil took too much of the smoke out. It was crispy but flavorless. Back to the drawing board.

    What a bummer. That smoked and crispy would be awesome. Wonder if a long low smoke then some frying might help or long smoke then high heat cook?

    Long and slow then high heat was my approach. I think it didn’t have enough skin to really get crisp. After smoking the skin was really thin but delicious.

    A little PF rubbed tenderloin indirect cooked on the gas grill tonight. The brown sugar in the rub goes really well on the tenderloin.
