    Basically, vacuum pack the meat (or squeeze the air out of a ziploc) and put it in a temp controlled environment. (Hot water) and hold the temp at exactly what temp you want your steak done to. Like 129° for medium steak. Let sit for and hour and the meat is fully cooked to exactly what temp you want. Then sear the steak and it's perfectly cooked and tender

    Think clicking that thing on and off a bunch will ruin it?

    I’ve seen people use a hot water heater coil hooked up to a temp probe thing to do sous-vide. Seems pretty economical.

    I haven't had any issues with it yet, and don't really see it being an issue. Even then, it's about the cheapest crock pot you can but, so not a huge loss if it doesn't make it.
    And there are quite a few ways to get a sous vide cooker, crock pot, silicone heat pad on an old pot, heat coil, I have even tested my little setup with a rice cooker. It's like a single serving crock pot.

    I know we're coming up on the end of slow cooker season but I snapped these pics from a cookbook my mom had sitting out yesterday. Printed in the early 90s. I'm going to do the pork verde for taco Tuesday tomorrow.

    Made a ham and beer cheese soup, can easily be modified to work in a crock pot. I made it in a Dutch oven and did the prep work in the dutch oven on the stove top. Figured you guys over here would like it
    Also, I wrote this to the best of my memory, so good luck...

    Ham and Beer Cheese Soup

    1lb bacon
    2 cloves garlic
    1 onion, chopped
    2 sticks butter
    1 1/4 cup flour
    64 oz chicken broth low sodium
    2 cups heavy creme
    1 beer (Coors banquet, or a pilsner)
    2-3 cups cubed potatoes
    4 stalks celery
    1 1/2ish lb ham (not sweetened/honey)
    1/2 lbs pepper jack cheese cubed
    1 1/2 lbs sharp cheddar cheese cubed
    1/2 tbsp pepper
    Salt to taste
    Dutch oven/crock pot

    Cook bacon in Dutch oven, drain all but a light coating of bacon grease, set bacon aside (to get bacon evenly crispy without burning, put it in the microwave for a minute or two)

    In the Dutch oven, add two sticks of butter, garlic and onion, simmer until onion starts to turn clear

    Slowly add flour and pepper, stirring in and mashing any clumps of flour.

    Once a the flour is saturated, begin slowly adding in chicken broth. After chicken broth, add in one beer and heavy creme.

    Separately, boil potatoes until the outside edges get tender,

    Once the soup gets hot, slowly add in cheese, allowing it to melt as it's added

    Toss in celery and potatoes, let soup simmer until celery starts to get soft.

    Serve with crackers, and beer.
