    Hi all,

    With the great sales on turkeys for the Easter weekend I picked up a beautiful 20 pounder to smoke on Sunday.

    Any tips or suggestions?

    I was thinking about Weber kettle, snake method, 275, apple wood. Rub some butter under skin, season it up with some random concoction, and let it fly.

    Should I spatchcock? Truss? Inject? Anything to look out for?

    Its experimental, not our dinner, so I'm willing to get a bit crazy with it.

    Only thing I’m wondering is I thought somewhere along the way I read you don’t want to smoke such a large bird. For food safety, I guess it’s difficult to get it past the 160 mark in 4hrs....don’t quote me though!

    Bought a rib roast to cook tomorrow. Going to keep it simple with salt, pepper and thyme with a little olive oil over it. Going to do this one in the oven though so over a bed of onions then make gravy with the drippings. Bought some merlot to make the gravy with so going to be eating good. Side of bacon wrapped asparagus and gold buttermilk mashed potatoes.

    Since I was in the meat dept figured some NY Strips for dinner tonight with a stuffed mushroom appetizer would be tasty. Roasted asparagus and some mac n cheese.
