Well here goes my first attempt at brisket on the pit barrel. Good coating of PF original, let it sit overnight, a light dusting of spicy this morning and it's on the smoker about 9:45. It was only a 10lb packer so hopefully it will be cooked, rested and ready for dinner.

 

All of yalls food look great, but we are going to try and catch some food for tonight. Happy Easters smokers!

I already had that idea. Maybe if I get to build a new pit it will be an option on it.

 

Sliced into the spiral, it was really good. Even with six adults, there is a bunch left. I haven’t even touched the other one yet. Once the family leaves, time to start the stock for ham and bean soup.

 

Ham string beans and potatoes?

 

Yes sir. I add onion, celery, and some thyme, etc, to season. Simmer the water and uncleaned bone for a few hours, then remove the bone, clean the bits off the bone. Add in more diced ham, and simmer for another half hour or so, then potatoes and chopped fresh green beans for 30 minutes.

Easter dinner just went on 2 chickens a d a boneless leg of lamb if I remember I'll post a finished pic

 

Bone in prime rib roast, close to 3 pounds, Easter dinner for the 2 of us. Going to rub it with butter/garlic/thyme/rosemary/pepper/salt then smoke it with hickory on the 26' Webber kettle.

 

I’m nowhere near that point. Had to make a run to the grocery store for taters. Yours looks good.
