    Smoked 2 1/2 pound bone in ribeye roast for Easter yesterday - small chunk of apple and a chunk of mesquite. Mixed soft butter with diced garlic, rosemary, thyme, salt and pepper then rubbed it all over. Took it to 120f then wrapped in foil to rest for 20 minutes while I built up a hot fire. Took it out and seared it. We were so hungry there was no time for after pics. It was fantastic.
