Just wait til you get older like me, nothing will agree with you. I used to be able to eat a little green pepper and onions all day every day. Now I look at my beloved onions and get gas and heartburn. :annoyed::annoyed::annoyed:
I used to grow and harvest about 2, 5 gallon buckets of sweet onions. I don't even plant them anymore. It's not worth the suffering. :(

Possible the wagyu. Or lighting. Not sure. I kinda thought it was the meat. I think the SRF wagyu I did was a little off colored too.

Looks good man sorry it wasn’t as good as you expected. That rub sure looks to be spread nicely though. You must have used a top notch dispensing device.

Never had ring of fire, but heartburn, gas, and misery, yes. I have found that I can eat onions etc at lunch and get along ok. Supper time, nope!

I’ll have to get the recipe from my wife. But it’s basically smoked corn/bell peppers/onion/jalapeño, miracle whip, cream cheese and cheddar cheese, plus seasonings is your choice. We use garlic powder, paprika, chili powder, red pepper flakes, salt, and cayenne powder.

I smoked the veggies, she made the dish and then I continued smoked the dish off until the rest of dinner was ready. Turned out amazing.

9lb pork shoulder rubbed with PF Spicey, on the Weber with some chunks of hickory. Got a little tipsy playing darts last night drinking tequila so meat went on later than I wanted.

And now it’s all to shit! Coals almost went out once and now temp is climbing, seems to have stabilized though.

I bought a Flame Boss smoker controller. Well worth it. Does wonders for regulating the temperature. No more opening/closing dampers trying to constantly chase a temp.
