    Amazon just dropped my new ink bird gauge off this morning just in time for use. Didn't test in cold water or boiling water yet.

    I think the wind got me today. The last pork butt smoked just fine. I did just reinsert the meat probe more to the center, it may have been a touch too low.

    Started a pork butt waaaaay too early this morning. That’s what I get for listening to my girlfriend trying to think she knows better. Never. Again. Had to drop the temp down to 225 to hope it slows down. Was planning to do a pulled pork dinner with some friends but it may turn in to pulled pork lunch lol

    Trying some PBBE with a little different method. Saw a couple videos where guys had hung them with skewers and they looked good so we will see how it turns out. Nice liberal coating of PF meat massage to start, hoping the high brown sugar content will go well on these.

    Also have some pork butt cut up and marinating to do Al Pastor tacos for dinner the second half of the day. Going to try some of it skewered in smaller pieces as well to see how it works out.

    None....yet.
    If you wrap in foil (i double it) and a towel, then put it in a cooler it'll stay hot for hours. Ive done 3 at a time a few times and the ones that sit like that for 4+ hours are still as good, if not sometimes better.

    Ya that’s the plan. I usually wrap and rest for an hour but I was hoping to have it ready closer to dinner so I could throw some corn and other stuff on as well. I’ve dropped the temp down to 225 and it’s slowing down nicely.

    PBBE turned out amazing, it's a shame most of it is going to have to go in the fridge so it can be taken to work tomorrow... but only most of it.


    Now add a little more charcoal on and more meat is on for al pastor tacos tonight

    First crack at the wicked beans recipe that was posted here. I did add more pineapple and bell peppers than it called for. With just 2 jalapenos and dry mustard it didn't have the spice I would of liked but it was still good.837EF5EE-853C-4F36-9F06-D00B11561991.jpg Also some pulled pork, bone pulled right out. Now it's time to review my sons homework. Hope everyone had a great weekend.
