    50 was unreal.

    60 was out of the question. Until I got there.

    Reverse seared filets, taters, and green beans. I got the coals going in the smoker, and handed it off to the wife. Too much pollen out there for me to be doing anything right now. Instant sneeze fest when I walk out the door.

    It's a lot of fun. Because of my limited time home, I cheat and buy the cornbeefs and soak, rinse and dry. Then pack the pastrami rub on them and smoke to a IT of about 195.

    Worked on our two evap coolers today. Over the past few weeks, I sanded, primed and painted the surface rust in the dry section, then I replaced the rusted 25 yo wet sections with stainless steel replacements I'd picked up in PHX last January. Started one up today and it let the smoke out. Hefting a 1 hp motor into an odd place is not easy. However, we're now ready for warm weather.

    Brother Maner, these are deadly. I quadrupled the recipe. Plus as usual, I went off the reservation, I added some Mezcal in place of the tequila for a more intense flavor profile!

    I'm telling ya, East Meats West BBQ would be huge! With the Burrito bowl on the side these are kickin'!
