Why not just replace the sensor?

Not sure how to bypass, but before you do anything reset the code and see if it comes back.

My sister's CRV had the same code come up, shop told her 1,000 bucks to replace the Cat. She discoed the battery for a min, cleared code. (proud of lil sis!) So far, the light is still off. It came on during a road trip, and I have read that if you get a tank of gas that has too much oxygenation in it, that can cause the issue.

Edit: I should clarify: Not sure which code she had, but the definition was "catalytic converter inefficiency". Your code is low sensor voltage, so maybe not the same thing. But, reseting the code is free and worth a try. If you really have an issue, it will come back quickly.
