Looks nice! There doesn't appear to be much slope to that roof - what's the pitch?

 

Im not sure of the actual slope, i had to change my plans on it twice due to the top air vent, and the chance that we may add on and extend the porch later on. So this was a last minute change on it.

 

I might look into the eyes of the beast, and get this brisket on in an hour. No rain until 4pm, and only a 50% chance. Worst case, i finish in the oven.

Turkey wings smoking, wife brined them for a couple hours. I asked her what she used and she said a secret, so I am guessing she doesn't know or wants us to guess the flavor. Will post pics when done

 

Got the ole pit fired up today with briskets pork belly bites and pastrami’s

Leave Tuesday morning. Short trip.

Went to the Barton springs for a run then swim and now lunch at Billy’s Bbq!

 

I took whatever I can grill from the freezer. And bought tri tip too lol

Turkey burger, corn and beef sausage

 

Was going to do a couple of butts overnight, last night, went to pick up my Sis’s, she forgot to take it out of the freezer until Wednesday. So, I’ll just do those on Monday night. So I just threw on a batch of flappers for this evening.

I’m so pissed. Weather forecast called for rain most of the day. Hasn’t rained a drop until now. I guess my brisket is aging for another week.

 

Did wings sauced and nekid, Myers Jalapeno Cheese Sausage, HEB Bacon and cheese cube Burgers. and some greenery...


Sauce for wings was a mix of Sambal, Sriracha, Honey, and minced pickled garlic. really good stuff! added it to the sausage.





Good enough to get us through to the GoT finale in a little bit!

 

My grandpa had a pretty accurate saying: “boy, never wait on the rain to start, just wait until it ends.”

 

I didn’t have time to smoke this weekend sadly. Will try next weekend or the following. Probably going to smoke some chops Tuesday or Wednesday though. Going to hit up Walmart and see if I can pick up a butt and/or brisket.

 

I know. But I didn’t want to waste this brisket. If I started it, for sure would have poured all day.

 

Sams had prime brisket last time I was there.
