    Now I’m not gonna lie I’ve had some good vegetarian dishes. I’ve worked with a lot of people from India and some of them didn’t do meat. We used to do pot lucks where I used to work and some darn good food came in with them. Both with and without meat.

    Im sure there are good dishes...but typically when I go out to eat I want something thats not vegetables only...

    10 Lb brisket ready to go in the smoker for an overnight smoke. It's been marinating for 24 hours and smells good even uncooked.

    It wont even fit on my largest cutting board.

    I was able to work in a quick grilled meal late last evening after work. Nothing special, just boneless chicken thighs, some COC and green beans.

    It's got some Mods
    The good ole' WSM never fails to impress me. I had it up to temp by 7am yesterday and she held steady for the 12 hours it took to bring the pork butt up to temperature. I never had to mess with it once!

    I really wanted to do ribs yesterday but Cash And Carry was sold out so I went with some pork belly burt ends. I'm not sure what I did differently this time around but these were by far the best ones I've ever made. Just a little PF rub, some butter, and some brown sugar.



    We'll be making pulled pork tacos later this week. Sorry for the somewhat lame photos.

    @itzyoboipaul ... I swung too low and missed. :bananadead: was hoping for a counter or to offer again this am. it's gone... did you offer at all? $600 was too steep for me with what it needed but had to try! thanks for the tag though. I'll keep looking!
