Thanks for this info. I will try that on my next one. I was able to keep the smoker at a pretty constant temp. The meat was boneless and irregularly shaped and I think because I didn't use butchers twine to keep it bundled up, it didn't cook evenly. It was my first one, and all considered, it tasted great. Ya live and ya learn I guess.

Mawnin all. Gonna see if I can make my lunch real quick , mow my lawn ( or most of it) , and get a couple hours of fishing in before that four letter word I/we dread so much each day!

 

On second thought, screw the lawn.
