Good thing I kept reading. I couldn't think of a reason why any sane person would casually throw on 3 briskets in his driveway at 0700 on a Saturday, but the cause is a good one and now it makes sense. Keep us posted with the pictures!

I just appreciate you operating with the presumption that I'm a sane person.

Brisket is resting. Here's the pork belly just before pulling!

Pork Belly Burnt ends with a couple fatties hidden underneath. Every time I use this WSM I fall in love with it again.

Tell me about it. Worked normal day Friday and then started a major upgrade at 0100 last night finished at 0430. Got a couple of hours sleep before and an hour and half after. Then shot 5 stand this morning until my eyes bleed and then a couple more hours sleep.

But hungry and @bvbull200 filled my order for 3 lbs of meat massage, I've been out. So I just had to cook something tonight, the bastage :D

Figured start with only 8 oz. of steak, filet minion. And 8 oz. of crab mixed with cream cheese stuffed in an Anaheim pepper. And wrapped all of that with a pound of bacon. Because bacon. And then liberal coating of Meat Massage. And gasser because I am getting up at 0500 and breaking more clay targets at another place in the morning ain't got time for the smoker and charcoal. Tiz OK the Genesis, grill grates and smoker box kicks ass at 250° when you don't have time

    hour in.jpg

    smoking steak crab pepper.jpg

Shit what the hell was I thinking it is still 250° no matter how I am cooking it. Almost 2300 and have at least half an hour to go yet. Am hungry, and the smell is killing me. So worth it...

If it works out you're going to only eat one meal a day...

    steak anaheim platter.jpg

Twice baked potato with blue cheese and bacon, butter, garlic salt and pepper. Filet Mignon cubes with onions between slices. Wrapped in bacon. Dusted with Meat Massage. Anaheim pepper filled with crab meat and cream cheese, wrapped in bacon. Dusted with Meat Massage of course.

    steak anaheim plated.jpg

And have enough left over for breakfast. Time for bed. Once the food orgasm passes...
