for off-roading should I level my taco or leave it stock for flexibility? It is also my daily so I want a smooth ride

Depends on where you're off-roading. Most of the roads I travel can be done stock height. Leveling only the front also decreases your visibility a bit up front. Tire choice could also help increase ground clearance a little and change the ride (for better or worse).

Leveling a truck is more for style/taste than function. The rake (higher bed than cab), is for carrying loads.

For offroad: A suspension lift gives you better approach and exit angles. Larger tires gives you more ground clearance.

As has been cited on this forum umpteen times - 4X4 Tacoma's are quite capable in stock form. Often times more capable than the driver. As has also been cited on this forum, lifts, tires and other off road mods spend more time on the road than off.

I would leave it stock. Your truck will last longer.
