    Move to Texas. Besides the fact that everyone else has already, pools are much less expensive, and you can enjoy them for more of the year. And the drive to Cars n' Coffee would be much shorter. And you can say hi to Chad.

    (obviously, these reasons were not mentioned in order of importance)

    Heh we like a little spice on our brisket :D

    Its standard fiesta brisket rub with extra salt, pepper, onion powder, garlic powder, paprika, cayenne and a bunch of brown sugar. Gives it some spice with some really good taste :D

    Until you have to make sure to take the lid off before it cools down, or else the lid gets sealed to the barrel, then it needs more use.

    First time I had that happen, I figured it was a good idea to just leave the lid on so that it could cool overnight and then the humidity wouldn't turn the ash into bits of concrete. Then in the morning I grabbed the lid and picked the entire WSM up. From then on, the lid comes off on cool down. ;)
