    I use the ThermoPro TP20 for now. It’s been great got it on an Amazon Prime Days sale last year for like $45.

    Gesh you all been busy! Spend a couple of days away shooting clays and now can't even catch up on here!!

    I do not, I cook flank and skirt directly on the coals most times with the Alton Brown method. It is one of the few times I will use lump and then use a hair dryer to blow the ash off from the coals before throwing the meat on.

    Sometimes will use a grate but put the coals directly under the meat, want it hot and fast then wrap in foil for 5-10 minutes it will continue to cook.

    You want to cook flank a bit longer than skirt. Usually anyhow as it is a little thicker. I much prefer skirt steak over flank anymore
