    Thank you!

I got these at Kroger, actually! They are Nolan Ryan beef, which is basically upper choice or lower prime. $10/lb wasn't too bad!

I probably ought to post the results, too, lest anyone think all we're good at is buying the meat. ;)

Twas a good day! I had a silent chuckle when I saw the guy.

    Pretty much just that!

They are usually a tad cheaper per pound, so you don't get stuck paying much extra for the bone. Even so, I'd pay a couple bucks for the plate presence.:D

Suprised no one has mentioned the Smoke or Signals by Thermoworks. Thermoworks makes some solid stuff, all of it is. I had a Maverick for more than 10 years and it still works. But the Smoke is heads and shoulders above. Used it tonight. But didn't put the pit probe in that is ambient air temp. Gnats and skeeters are bad but no need to make excuses for the Genesis, grillgrates and smoke box.

    Reverse sear. Everyone got Pitfaced.

Blood test this week so had my greens. Kind of :anonymous:

Yeah pretty much. They used to call them Viking steaks around here, gave the impression you could use them as a club and beat off anyone that tried to take it away from you. All of a sudden they are now called Tailgate steaks. Except at Costco still Tomahawk there. They are extra thick and I do like that.

But more times than not I will break out the sawzall and cut the bone off for the dog before I grill them. They don't give him gas :)
