I smoked a metric shit ton of Salmon and Steelhead when I was living in Wa. State in Belfair, Olympic side. That was back in the early 80's the Hood Canal bridge had sunk and I left just before they rebuilt it and opened it again in 82.

Ex Wife kept trying to throwing it away and I'd dig it out of the dumpster. Sometime in the early 90's she was able to get it past me. Notice I said Ex Wife?

It really did smell of fish and the smell never went away so stuck with it for nothing but fish. Keep looking at something to replace it with I want tall and plenty of racks. And well insulated, in the winter this is sometimes the coldest place in CONUS. Still looking. If money is no object there are options but it usually is a lot of money.

That is "the" way to do it. Or like I said quoting myself bacon grease instead of butter.

I store bacon grease in the fridge and use it instead of butter. Like coring an onion and instead of filling with butter and brown sugar use bacon grease and brown sugar.



But yeah butter works too
