    Has anyone had an issue with the thermo probe on their Green mountain grill ??? I’m trying to do tri tip and it keeps bouncing around from 97 to 117 to 104 now it’s back down to 93.... thinking I need to invest in a thermo pen

    I had that issue once, the jack needed pulled, wiped and re-inserted. Then I bought a MK4. Nice to have a backup. And an Inkbird to backup the backup. lol

    Rubbed 6 hours before cooking with sea salt. And then 30 mins before with GMG beef and sizzle rubs15A655BE-9A45-417E-AD1D-09EF88EC0277.jpg Took them out at 115 and let them rest for a few mins while I turned up the grill to 500CC8DF6AD-BF6F-4623-90EF-2A398CFDC331.jpg 56E96283-50BF-4881-988C-7159AFEB8900.jpgReverse seared at 500 for 5 mins on each side.     Final thoughts on my first tri tip.

    Nice smoke ring but a little salty. Tired to do a salt brine but forgot about it yesterday and it didn’t work out like I had hoped. Suppose to do 24 hours and I did 6 hours.

    I also need to figure out if my temp probe. This is the second time where I feel like I hit the number I want and then I go and eat it and I could have left it cooking for another 20 mins. The first time was chicken and I’m just glad I didn’t get sick. Luckily this time its beef and even though its pretty dang red/pink in the thick parts I’m not scared by it

    Overall for my first longer smoke on the pellet grill I think I did ok... I would give myself a B-

    Valid option but the runner is waaay more comfy for the drive. Better milage too. Wife said I could take it too. Not gonna move the grill though;)

    Nah me and charcoal don’t get along for some reason and I have absolutely no need of anything that big. Most I ever smoke at one time is one rack of ribs or one brisket, one pick butt. Just cook for myself and my older mother that nibbles around here and thee

    I here ya though. If you find one cheap enough they are easy to flip though. 700 doesn't leave much room though

    :laugh: Wouldn’t mind to find one cheap clean it up and flip but not like I need another project, I’ve had my house torn apart for 3-4 years “remodeling”, got a ton of parts to get on my truck and none of it is happening lol

    Assembled the pitboss 3 series. Easy to get together but i took my time and it was hot out. Sorry no pictures. Looks and feels nice though. Door actually has a seal so that alone is a huge improvement over my last smoker. Excited to get it seasoned just didnt have time tonight after all

    Wrong kind of chicken fire smoking. If you're doing breasts, you want breast quarters with bone and skin. With that said, thighs are cheaper per pound and juicier and way better for smoking. With any poultry, go light on the smoke because it doesn't take much to over power the flavor of the meat.

    Afternoon smoke for dinner.
    And a few brews while supervising
    Snake method, 4-5 hrs, peach wood for smoke

    Forecast here is for 31C today also. The front brought storms and flash flooding everywhere, roads closed all over. Was going to shoot Sporting Clays today but can't even get to the club. Mother nature does like to put on a show when weather changes that much. Supposed to be 34C (93° F) tomorrow. Help, I'm melting...
