    I am so weak sometimes...

Been through this drill enough times to know I wanted the case and the silicone boot too. Finally pulled the trigger, but didn't spend the extra money for the leather case.

This was the final pic before they became gone.

Slathered in Sticky Fingers Carolina Sweet sauce for the last hour. Tried out Stubbs pork rub this go round also.

I believe everyone liked them since 3 of us ate 2 racks. :anonymous:

So whats the advantage of the reverse smokers over the regular ones?

I've been thinking I may like to get a bigger smoker. I like this one but it's full with 2 racks on it. No room to put corn or something else with the meats.

Man you could put dual motors at each wheel. One for forward/backword and one for turning. Oh hell even better. Tank tracks on either side.

I lost the little triangular thing that holds my grill probe in place above the grates. What’s it called and where can I source a replacement?

This is the fabled "unicorn" rub. Production name is undisclosed at the moment.

It picked up the name because, for the longest time, I had little batches I was working on to tweak it and it was always "just about ready", but never appeared. Well, it is finally ready for final testing.

Got it back from the co-packer and my initial impressions are that it is exactly what we were looking for given the sample we had them work off of. Next test is to make sure it cooks the way my homemade stuff does.

I have a brisket going on tomorrow night, some steaks for the 4th, and some chicken and ribs for the rest of the weekend. I'll get a nice round of testing in and decide if this gets the green light!
