    The unicorn test is underway. Cooking a brisket for my employees tomorrow as we roll in to the holiday.

    I love the color and consistency of the rub, for sure. Good timing on this as I did this same cook a couple days ago with the homemade unicorn, so I have a recent baseline for comparison.

    Two huge fatties going with it. Both have 1.5 lbs of breakfast sausage in them. This one got stuffed jalapenos in it. The other is pretty traditional. Both wrapped in bacon weaves.

    I prepped a pork belly weave, too. Trimmed it up when @Misplaced Nebraskan was over - decided to go huge with it! I'll cook this pretty similar to pork belly burnt ends.

    Possibly getting a free 22 performer. It was posted a week ago on Facebook marketplace. Also found two other 22s more local for around 50 that I will try and get down to 40 tomorrow. Or just maybe wait after the 4th when everyone wants to sell haha

    I made some chicken florentini au la Amercain this past weekend. Au la Americain is almost like the original chicken florentini the only difference is I switch the chicken for ground beef, 80/20, and the florentini for some buns. Add some cheese, mustard and mayo and your gtg!

    Just dropped the pork belly weave on. I could really go for a whiskey sour or a straight up pour of Booker's right now. Stupid overnight cooks before work....
