    Not smoking but I did a flank steak on the gasser last night. I had it marinating in a combo of Yoshida's and Sriracha sauce all day. Very tasty!

    Man I need to do some fatties again soon. It's been a while since I last did them and now after seeing those pics I must have.

    Maybe next week I will throw one on the mini smoker we have up here at the cabin. Or two? I think last time I did 3 or 4 of them. Like an obsession. :rofl:

    Fatties are always a crowd favorite when I make them for my buddies. It seems like lately I have been getting more joy out of watching others dig into them rather than eating them myself. But yes, they are damn good.

    Oh ya we always do them for gatherings. Prep time is sort of a PITA but it's worth it. Not to mention I don't have to get up and TooDamnEarlyO'clock to start the smoker. :rofl:

    Here is the pork belly braid. I would let this run a tad longer in the finishing smoke next time, but damn it's delicious. Similar to enjoying pork belly burnt ends, but a little less exposed surface area makes this eat more like traditionally cooked pork belly. Very tender and flavorful. I still prefer the burnt end variety in most cases, but I will sub this in plenty often. The presentation and serving is awesome. These would sell like hotcakes out of a food truck.

    This was the big unicorn test. The brisket went a little slow for me and I had a deadline of sorts (which is a crappy way to have to cook), but that just made this a pretty legitimate real world test! The flavor was excellent. I was pleased with the pepper + salt taste on the bark (wish I would have used more rub!). Lots of other flavor going on in there, too, but didn't overshadow the beef flavor. It was very reminiscent of the cook I did a few days ago with the homemade batch, so that is one positive step in the right direction!
