    We’d miss all the protest if we didn’t rush everything!

    I like smoking my Turkey for 6-8 hours at a low temp. Nothing wrong with more time under a good smoke IMO

    My rule to the wife is, "as long as I'm cooking, I'm drinking" so I dont see a need to speed things up by running up the temp.

    Smoked Turkey is great.

    Try smoking a rib roast or ribeye sometime, it will ruin you on having it any other way.

    Yep, very similar to jsinnard's recipe. 6-7 hours at 225°, sometimes I wrap in butcher paper for 2 hours during the cook, sometimes not, then sauce them during the last 1.5 hours. YUM!

    "texas crutch". Look up the 3-2-1 method.

    I used to do the 3-2-1 method, but that made the meat too soft and fall apart. I guess it depends on your set up too. I've done 8 hours on a pellet smoker and it was pretty good too, but it was a thicker spare rib style cut.

    Funny you say... I have done the 3-2-1 a few times and don't care for the texture. I have been playing around with wrapping in paper, but haven't seen a huge difference, although the paper pulls some of the fat from the ribs. Part of the draw for me is playing/perfecting the recipe!

    Yeah that's why I stopped...it was too mushy. 3-1-1 is where it's at for me! I've actually cold smoked, did sous vide and then finished back on the grill too but again, too mushy.
