Food Smokers and Smoking Tips/Tricks/Techniques

Paid $13 the other day for a 15lb bag at HD. Walmart has the 30lb bags for $17.

This is basically my entire patio (yes it’s a disaster. I’m currently rearranging to fit the new 22). Don’t got anywhere to dump em.

Do NOT get that Vortex from Amazon. It is a cheap Chinese knockoff and will not last. You want the Medium from Owens BBQ http://www.owensbbq.com/vortex.html

The baskets are handy and work for the rotisserie. You can also use them in place of a Slow N Sear



For searing a pair of Weber charcoal rails

$22 Weber 7441 Replacement Charcoal Grates, 17"es

charcoal grate and set it on top of the rails. It puts the coals right under the meat and takes less charcoal.

Works well for me, and you can use the other side for a second indirect heat and cooler zone.



And a medium width plastic putty knife to scrape out the inside of the kettle. It will build up with grease and fat and you do not want to use metal inside it to scrape it.

Those would be a great start IMO and not too expensive.

I do too, have 2 small metal trash cans I dump my ashes in. I do not throw them over the bank until they have sat in there for a week or so.

So I see a lot of conventional pieces of meat in this thread. How come no wild game?

 

Well, got a Boston butt, pack of chicken breasts and 2 packs of wings for the smoker. Should be good for lunch and dinner tomorrow.

Going to smoke it with some hickory and cherry wood.

Wait, it is July... Season starts again in 2.5 months. How the hell does game sit in the fridge for almost a year?! In some States that is illegal. Which reminds me I should clean out both freezers LOL. Never know what you'll find in the bottom of them.

 

I haven’t been hunting in many moons and I don’t have the budget to buy it commercially. Even if I had the budget I can’t get myself to pay almost as much for the shipping as the meat is. Outside of that if I had it I would sure as heck be smoking and grilling it.

 

Alright. Finally got the grill wall organized! And the bike hung up finally. That thing took up all the space out here. Now it’s out of the way completely.

 

I found some deer in mine I forgot was in there when we moved. I was bummed I had to give it away.

 

Sweet. Saving this post. Will start off with the sear rack first as that was the main purpose of “needing” this grill.

Anyone that uses the offset smokers. Do these firebox baskets work for the longer smokes? I'd like to get something I don't have to watch as close on mine and ran across them the other day.
