    Honestly just about everywhere that’s sells charcoal now sells pellets. They work great I’ve been turning out too notch food for a while on one. All pits have their place and all take skills to make them work well. Pellets just make my life a little easier. End of the day it’s still wood and fire that’s making the heat and smoke. :)

    Got a late start to the day. Had to take the kiddos too get some fireworks. Doing a chicken with the basics. Paprika, black pepper, salt, brown sugar, onion powder. And doing my first tenderloin on a smoker like this. Seasoned with paprika, salt, black pepper, garlic and onion powder, cut down the middle and stuffed with apple onion and fresh rosemary from the garden. All of it is going down with an 805.

    For you California guys, you have no idea how hard I had to beg the local grocery store here to stock it lol.

    Forgot to take pictures before it went on but the 4th of July tacos are on the smoker.

    10lbs of pork butt sliced up and marinated for 36 hours in an al pastor marinade. I don't really have the stuff to do it fully authentic and slice bits off as it cooks but I figure this should be pretty close.

    Sliced into slabs about 3/8in thick and stacked on skewers. I had pretty good success last time I did pork butt for tacos and pork belly burnt ends using the skewers. Should give enough surface area for good bark.

    Thanks to @Misplaced Nebraskan too for the thermometer, I can watch and stress over all the different temps now, Haha.

    Tomorrow morning will be brisket on the smoker and a pork butt into the crock pot (NOT my idea) but more people are coming over tomorrow that we didn’t expect and the smoker we have here isn’t big enough to fit both in it.

    Ya not my way of doing it either. Would rather it be on the pit, but the big pit is back home, using the small masterbuilt at the cabin. Luckily I’ll be eating brisket I’m putting on the pit. :)
