    I'll tell ya it's the first one I've done so I'm waiting to see how it comes out. Probably about 45 mins or so I'm going to go and probe it to see how it's doing. Not thermo so I gotta go old fashioned here. :rofl:

    My normal brisket is usually around 12 hours or so, some faster some slower. This is the first time I've done the Hot'n'Fast method for a brisket though, so I'm hoping it's not a total failure here. :)

    That shit they try to pass off as brisket here is horrible. Like chewing leather. I wanted to ask them how they did it but figured they wouldn't tell me their secret anyway. :rofl:

    But, yeah, the low and slow is consistent, effective, and damn relaxing.

    You shouldn't have told him you were going to do it. Now he's always going to be suspecting it. Should have just sprung it on him. Or better yet even when it's not done the hot'n'fast way you should tell him it is just to see what he says. :rofl:

    Low'n'Slow is my preferred method but today sleep won out over preferred method. Ain't no shame in this game. Will see how it comes out and if it's decent then I have another method to use when I've got a time crunch.

    For what it's worth, last comp, I cooked my brisket in about 8 hours. Something like 15th out of 90 teams with really good tenderness scores. It can be done.;)

    Got about 6 degrees to go (wife got a probe) and it seems to be getting more tender. Looks good and smells good so far. Wish I had PF for it. :(
