If I leave the window down and ratchet the shit out of it with the tailgate down would that probably suffice?

You asked for the best way... not the cheapest, what can I get away with method.
You can, but that leaves 3 to 4 feet hanging off the back.

The cheapest and easiest route would be just buy a hitch mount bed extender and tie the kayak down in the bed and extender using ratchet straps with pool noodles to protect the kayak. Welcome to TW, love the color!

I use a Yakima long arm . Unlike the cheaper ones this one comes off the hitch and goee up on an angle, some go straight out of the hitch then go up which could easily hit the ground off road . My Kayak is a Bonified 12'7" . It can also be stood straight up and with their extension and a rack on your cab you could also carry it above the cap . It will support 300lbs when used as a bed extension and I think 150 when it is straight up . yakima-8001149-longarm-canoe-kayak-hitch-rebox.html .watch

A 10 foot is short - no need for a rack or a hitch mount of any sort - leave gate or cap window open and strap it in with redundant straps and it will be perfectly fine. I did it repeatedly with no issue.
