So didn’t do a butt on the smoker (at the cabin and it was in use) so I tossed one in the crockpot. Put a heavy rub from a local place on it (sweeter rub) put it in the crockpot, dumped in a few cups worth of Dr. Pepper in there and put it on low. Cooked it about 10 hours, Pulled and shredded it. Then I took a good pit of juice out of the pot put the shredded meat back in added some more rub and some more Dr. Pepper in it and mixed it up and left it on low for a few more hours. I’m not a fan of butt from the oven or crockpot but I actually have to say this came out REALLY good.

Well the Spam is done, turned out awesome as always. This will be great on a fresh biscuit in the morning, maybe with a bit of mustard. BTW it was sprinkled with Tony Chachere’s “more spice” creole seasoning.D23758A7-C80D-42AE-9765-B9DE26B3C3E1.jpg

Here is the best shot I could get over the fingers reaching in. Straight up SPG, no wrap, 12 hour cook at 275ish, short rest because I was hungry. Old school post oak Texas brisket 84A9D6FC-5840-4242-A251-8CB3E61311E7.jpg

Thanks buddy, trying to get back to my roots, and get the nonsense I did on the competition trail out of my system. Good, simple, slow bbq is where it is at for me these days.
