    Watching this now... why is the brisket cut in half? Is this a normal thing to do? I'm really wanting to do a brisket in the next couple weeks, so trying to learn all I can again before throwing one on for the first time on the GMG

    I cut mine into 3 :eek: . 1st time I smoked a brisket did hot and fast so was afraid flats would dry out . Came out good so have never done one whole . I just use montreal steak seasoning and wrap at 160. I still afraid to do one whole lol.

    I'm thinking I might try using wood on the next smoke to try it out. Get it started with the charcoal then switch to wood. Might be a dumb question here but since I've never done it before what kind of wood does one use, oak? I know you still would use some smoking wood in it but what would I use for the main heat?

    My friend just used peach for the ribs he did on the 4th. I'm sure it doesn't matter though

    I figured you'd use something besides your smoking wood for the main heat source, no?

    I use post oak, pecan and some mesquite depending what is cooking. I fire up with a weed burner.

    yup. good ol post oak then toss in some pecan or mesquite or hickory. Fruit woods for poultry and pork too.

    Not sure, I just know he said he used peach wood, don't know if he used anything other, it all looked the same. But I don't know what he started with either.

    Watched both of those brisket videos earlier, now I'm itchin to smoke a brisket, or anything really at this point! Sadly no meat to smoke right now... Going to go check out this butcher that's by the weed shop this week though and maybe do somethin up friday or sunday :drool:

    Hickory & Mesquite are my fav’s but I’ve used Alder too. One time I smoked a big slab of bacon with a big ol cherry knot. Best I’ve ever had.

    So do you guys order your smoking wood from somewhere or just use the chunks?

    Don't know of anywhere around here they would have fruit trees in stock and seasoned.

    Get mine locally from a small time furniture builder & know a couple of guys in the tree biz. The Mesquite I get from Canadian Tire when it’s on sale.

    It is funny. I grew up with us cooking on mesquite. In Texas 40 years ago mesquite was the trash wood us poor folks used because we could not afford briquets. So we walked out into the fields and scavenged mequite. I was shocked the first time I saw it for sale.
