    I thought I read somewhere the shun premier chef was 12°. But 15 would still be plenty. Just curious.

    I have the Shun carver\carving set, but from what I have read they are all 16° :notsure:

    Of course it is at the very bottom-

    HONING AND SHARPENING
    In order to maximize the life of the blade, regular honing with a Shun steel will be necessary. Weekly honing will extend the time between sharpening significantly. When the time comes to sharpen these premium blades, we recommend using a whetstone, the Kai electric sharpener (specifically designed to sharpen Shun’s 16° blade angle), or sending the knives to a professional sharpener or to our Tualatin, Oregon center for free sharpening.

    My small Chef is a Miyabi at only 10° so I only use it for softer items. I use my large Chef Henckel Pro S for the heavier tasks. Actually for almost all Chef knife tasks. Personal preference but I like the weight and heft of it.

    Their honing steel is 16 as well. Some reason I thought it was different. I was stuck on this and the myabi and the shun felt better in hand. Still want a myabi though!

    Which one are you looking at? If I put the really good lense on the laser we can get pretty small and stay sharp.
