    Update on the unicorn.

    A new blend is being sent to me first thing Monday morning. The only change is the addition of an anti-caking agent. Same stuff that's in Meat Massage and I do not anticipate any change in flavor or how it cooks. It's never been a factor in all the tests we've done on our other rub in the past.

    The copacker confirmed that one ingredient (Worcestershire powder) was causing a little caking. This ought to address that.

    I expect to green light the blend next week and place my initial stocking order.

    I've always wondered about what gets added to prevent clumping/caking ever since learning that a certain percentage of wood pulp is allowed in shredded cheese to help prevent it from sticking. Now my wife buys block cheese and shreds it at home. So much better taste and texture.

    No wood pulp here. Meat Massage uses tricalcium phosphate. The recommendation we received here was for silicon dioxide. These are pretty standard for rubs.

    Edit: silicon not silicone

    Ha ha. I think it's just that it's not as recognizable as "pepper" or "salt".

    Naturally occurring in plants, animals, water, etc.

    Very common in seasonings. ;)
