Thermometers just inserted. Brisket at 142, one butt is 108, the other is 117. Smoker running at 235-40. Off to a church picnic for a few. Will bump temps to 275-300 when i get home to finish them. They all looked really good so far. Going for nice bark, no wrap on these.

I sprinkled it with Tony Chachere's "extra spice" Creole seasoning @225* for just over and hour, as it seems to take smoke very well.

Went ahead and portioned some of it out and vacuum sealed for freezing, for those nights when a good sammie, nachos or even a PP salad sounds good but no time to smoke.

I find I use mine all the time. If I'd realized I'd used it as much as I do, I'd bought a much nicer one. Mines a bare bones Seal a Meal, works fine, just doesn't have any features.

I bought one that someone posted a ways back. It's a $200 Food Saver brand one, but it's a refurb and only paid $99 for it. Was gonna buy the Costco one but it was $130 so I figured this refurb is still a better unit overall.

    edit: this one: https://www.foodsaver.com/vacuum-se...n-system---certified-refurbished/2087356.html

I read somewhere some time ago that a refurb is a safer bet than brand new, reason being it's "supposedly" been looked over from one end to the other. Where as a production one was most likely never even tested? Makes sense, but who knows?

EDIT: That looks like a very nice unit, now I may hand mine off to my Sis and pick one of those up. Thanks for sharing.

Definitely makes sense in theory. I'll let you know how it is once I get it. I'm sure it'll be superb though.

I buy refurbs sometimes, if it has a warranty as long as the original warranty. If it's only ~30 days, nope.

Just had to pan my meat and put it in the oven. Juice was extinguishing the coals. Look and smell good. Celebrating with one of these.37327FBA-4389-45A0-BC5C-5FB6D59F9BEE.jpg
