    That is awesome! I have only caught them that thick a few times, yeah I'd take a 3 pack of those too :thumbsup:

    Not sure how you all can cook down there in this heat of summer. Only 86° heat index of almost a 100°. Haven't really felt like eating with this heat and no AC. Did Italian sausage peppers and onions on the kettle tonight. No way was cooking inside.

    Supposed to have AC again come Tuesday night. I am going to Costco and some meat will be grilled and smoked. You betcha!

    Have smoked it wrapped in bacon, helps keep it from drying out

    Is good. But IMO not as good as just throwing it on the fire after soaking it in water for a couple of hours

    OK It's now 2am and I can finally pull the best smoked baked beans out of the smoker. These were not from a can. I started with 2 Lb of dry beans that I soaked overnight. I put them in this large vessel and added a whole red and green bell pepper, a whole yellow onion half a pound of bacon, a pack of little smokies, 2 cups of brown sugar and lots of spices. I smoked it for 6 hours with Hickory pellets at 300* stirring every hour or so. I took a little taste and wow!

    I can't have any more since I have to go to bed and get up for work in a few hours. I covered it and will let it keep stewing for now. You can see in the picture how the water level slowly dropped over time.
