    Speaking of Pitfaced..

    Got a 8lb. pork butt on, due to rain storms all night and this morning late start. Coated it heavily in PF of course. Ramping up the smoker now normally cook at 225. All this talk of hot and fast going to 275-300° and try to get this puppy done at a decent time tonight. Wasn't happy with the ribs I did hot and fast but seems like a butt might handle it better.

    Any problems with the PF rub at those higher temps and the sugar burning?

    Not really sure why but most of mine are red including the thermapen. Which is why I got the glow in the dark boot for it.

    I've cooked with it at temps from 275-300* frequently. No issues with burning, provided you don't hit it with a lot of direct heat. A diffuser of some sort works fine in my drums.

    That said, I scorched the sugar on some ribs when @Misplaced Nebraskan was over. It was during the wrap and was cooking at 325* (got away from me) without a diffuser in place. Just burned the bottom a bit.

    Thanks! Figured but didn't want to take a chance and burn it. Taking this to a shoot, leave in the morning and I volunteered to bring the pulled pork for the shooting squad for supper tomorrow night. And don't want to screw it up, usually hard to screw up a butt however...

    Yep have a heat shield in place of the water pan so indirect heat and running dry.

    I do have a heat diffuser for a UDS, long story. And it would fit a 22" WSM. Almost tempted to buy a 22" WSM just so I can use it LOL.

    Well, I now have to get the Meater probes because they pair up with Amazons Alexa. I just got my Alexa device in yesterday and I’m already hooked. Got my smart plug on my espresso machine hooked up. The new Ring hooked up to it.... the future is now.
