    The unit I bought has an 18" surface and another 18" of steamer. (2 burner unit). But I'm going to buy an additional 24" surface so it'll give me room to stack dogs and whatever (onions, peppers, etc.) away from the burner (and opposite of the steamer) yet still keep them on the hot surface and keep them to safe handling temp (140*) and put the 18" aside for slower days. My base is about 36" because of the steam table side so, if this entire unit is too small, I'll drop in a 36" unit and get seperate steamer table. I made the cart frame dropdown about 37" for a unit to sit. Still a lot of unknowns but trying to build in as much flexibility as I can foresee...a whole lot of bureaucracy and thinking for a hot dog.

    Good morning all, slept until 8am this morning, I haven't slept past 6 in longer than I can remember. Must be recovering from 5 days of sleeping in open bay barracks and being up at all hours. Have a great Sunday!

    I feel you - I'm 51 and my boy is 15 months. He takes one nap for about two hours during the day and he won't go to sleep till midnight..every night.
    Last night there was no wind down, he was going full throttle till midnight :kona: :facepalm:

    Well just got up from another successful birthday celebration... cracked fiddy-too yesterday.
    The wife still has a seriously messed up shoulder/ upper arm and will remain in a sling for another month in hopes that the bones will mend on their own, rather than surgery...
    Start a new job tomorrow and all is good under the hood.
    Let the games begin...
